Star Wars Dinner Party Main Dish: Porg on a Stick

Did Chewbacca really eat the porg in The Last Jedi? I don’t know about him but my guest and I did. Not guilt about it!

You will need:

For the Adobo:

  • 1 tsp Garlic powder
  • 1 tsp Onion Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Black pepper
  • 1/2 tsp ground Coriander
  • 1 tsp Oregano

For the chicken:

  • 4 lbs of boneless and skinless chicken thighs
  • 4 garlic cloves, minced
  • salt to taste
  • 1/4 cup whole milk yogurt
  • 2 tbsp olive oil
  • 10-12 Skewers

For the Guava Glaze (Optional):

  • 4 tbsp butter
  • 2 garlic minced
  • 1 cup Guava paste
  • 4 tsp Worcestershire sauce
  • 2-3 limes
  • cayenne pepper

Instructions:

  1. For the adobo: Mix all ingredients from the adobo together.
  2. For the chicken: Cut each thigh in three pieces. Add oil, 3 tbsp of adobo, garlic, at least 2 tsp salt and yogurt. Marinate chicken in mixture for at least an hour or leave overnight.
  3. Place skewers in water for 20 mins. Weave three pieces of chicken onto each skewer.
  4. Place on broiling pan and broil turning constantly until done.
  5. For the glaze: Melt butter in a saucepan over medium heat. add garlic and cayenne pepper to taste and cook until fragant (1 minute). Add the guava paste, 1/2 cup water and Worcestershire sauce and cook until smooth.
  6. Glaze the chicken or serve chicken with guava glaze as dipping sauce.
